Primal quesadilla

Recipe Time!

A couple of readers have asked for recipes. I have a few dishes I make that people tend to enjoy. However, I have no classical training in the culinary arts. That said, I'm a fan of food... and have read multiple books on the subject, as well as experimented since age 12 in the kitchen.

Here is the first one - what I call a primal quesadilla. (Some people call this an omelet)
PS - the Primal Diet shuns grains. Being a diabetic, I have seen great results by following the plan! So this recipe will have no tortilla!

Ingredients:
1/2  small onion, chopped
1 tbsp of butter - divided into two equal portions
salt & pepper to taste
2 eggs
1/4 cup grated cheese (Cheddar and Monterrey Jack taste best to me)
1 slice of turkey (or whatever meat you like) - chopped
3 slices jalepeno (optional - but if you don't use jalepeno, then use bell pepper)

Directions:
In a 10" skillet on medium heat, melt one of the portions of butter.
Saute the onion, jalepeno, and turkey until the onion is slightly clear
Set these aside in a different bowl for a moment.

(crack the eggs and beat well)

Melt the other pat of butter.
Add the eggs, and swirl around until the bottom of the pan is coated.
Do not stir the eggs further!
Add the sauteed onion, pepper, and meat.
Add the cheese and salt & pepper to taste.
Cook until the egg is completely done and just before the cheese is melted.

Fold in half, and cook 30 seconds more to melt the cheese.
